Dunhuang
Dunhuang is a small town at the end of the Hexi Corridor, with the Mogao Caves on one side and the singing dunes on the other. It is far from everywhere and worth the journey.

Dunhuang Museum
Dunhuang Museum introduces the oasis before visitors confront its dispersed archaeological sites. Exhibits trace prehistoric settlement, Han frontier administration, Silk Roads trade, Buddhist culture and later local life through excavated objects, documents and models. It provides a chronological framework that helps the caves, passes and desert routes feel connected rather than like unrelated attractions.

Donkey Meat with Yellow Noodles
驴肉黄面
Chewy hand-worked yellow noodles are served with a thick mushroom-and-vegetable sauce, while sliced donkey meat commonly arrives as a separate cold plate. The pairing is Dunhuang's best-known meal format rather than one mixed noodle bowl.
Portions are often shared; confirm the amount of meat separately and note that this dish is unsuitable for vegetarian or halal diets.
Tart, fruity and sweet
Apricot Peel Drink
杏皮水
Dried local apricot skins and fruit are simmered into a tart, amber-coloured drink that is chilled for hot desert days. Recipes vary widely in sugar level and may include other preserved fruit flavours.
Ask for the sweetness level and choose sealed or freshly chilled service; it refreshes but does not replace drinking water in desert conditions.
Tangy, garlicky, nutty and spicy
Dunhuang Niangpi

Steamed wheat-starch sheets are cut into broad strips and mixed with gluten, vinegar, garlic, chilli oil and sesame-based seasonings. The cool dish is a common northwest snack with a firm, slippery texture.
Specify chilli level and ask about sesame or peanut products when allergies matter; choose vendors with good cold-food hygiene.
Rich, savoury, wheaty and aromatic
Braised Hu Sheep with Flatbread
胡羊焖饼
Mutton is braised with aromatics before broad sheets of wheat dough are laid over the pot to absorb the richly seasoned steam and broth. It is a substantial shared meal rooted in the pastoral and oasis food culture of the northwest.
Order for the group size, allow cooking time and confirm fat level. Ask the restaurant directly if halal handling is required.

For a thousand years travellers on the Silk Road stopped here to pray before the desert, and the caves they paid for at Mogao hold the finest Buddhist wall paintings in the world. Visits are strictly managed, in small groups with a guide, and the ticket is the one thing about the trip you must arrange ahead.
The town itself is easy: a grid of streets, a night market, poplar trees along the irrigation channels. The dunes of Mingsha Mountain start at the southern edge, with the Crescent Lake in a hollow among them.
Summer is hot and busy; winter is cold and empty, with cheaper tickets and more caves open. The shoulder months are the answer. The desert forts and yardang landscape to the west make a long, wonderful day.
Getting there+
**Dunhuang (DNH)** airport, 13 kilometres east, has flights from Xi'an, Lanzhou, Beijing and, in season, Shanghai and Chengdu. **Dunhuang** station is next to the airport: trains from Lanzhou take seven to eight hours by day, or there is an overnight sleeper; Zhangye is about four hours, Xining around seven. **Liuyuan South** , on the main high-speed line, is 130 kilometres away and a two-hour transfer.
