Gansu Bamboo Slips Museum
This specialist museum protects and interprets wooden and bamboo documents excavated from Gansu's frontier sites. Postal records, legal cases, inventories and private messages show how Han-era administration and ordinary life functioned along the Silk Road, while conservation displays explain why waterlogged or desiccated writing is so fragile. It complements the provincial museum by slowing attention from grand artefacts to individual words and daily systems.
白塔山公园
White Pagoda Hill
White Pagoda Hill rises immediately north of the Yellow River, layering temple courtyards, hillside paths and city viewpoints above Zhongshan Bridge. The climb makes Lanzhou's constricted geography legible: development follows the river while dry mountains press close on both sides. Historic structures matter, but the changing elevation and view of bridges, terraces and urban expansion are the core experience.

Lanzhou Waterwheel Expo Park
The Waterwheel Expo Park interprets the large wooden wheels once used to lift Yellow River water into irrigation channels above the riverbank. Reconstructed mechanisms show how current, paddles, troughs and gravity worked together to support fields and urban settlement in an arid environment. The site is strongest when read as practical hydraulic technology rather than as decorative riverside scenery.

Clear, beefy, aromatic and optionally spicy
Lanzhou Beef Noodles
兰州牛肉面
Hand-pulled wheat noodles are served in a clear beef broth with sliced beef, white radish, green herbs, red chilli oil and optional noodle thickness selected to order.
Commonly eaten in the morning. Choose noodle width and chilli level clearly; the broth contains beef and noodles contain gluten.
Chewy, tangy, garlicky and spicy

Steamed wheat-starch sheets are cut into broad strips and mixed with gluten pieces, vinegar, garlic, chilli and sesame or mustard-based seasoning for a cool snack.
Specify chilli and mustard strength. It contains gluten, and sauces may contain sesame; choose a high-turnover stall with chilled ingredients handled cleanly.
Sweet, grainy, floral and lightly fermented
Sweet Fermented Grains
甜醅子
Cooked oat or highland-barley grains are lightly fermented into a spoonable dessert or drink with a floral grain aroma, gentle sweetness and slight natural acidity.
Often served chilled in warm weather. Fermentation may leave trace alcohol; ask about added sugar and storage if sensitive.
Soft, earthy and gently sweet
Grey Bean Soup

Field peas are simmered slowly with dates and sugar until thick and earthy, producing a warm dessert whose name comes from its muted brown-grey colour.
Usually eaten warm. Check sweetness and whether additional thickeners are used; legumes may cause discomfort in large portions.

Nobody calls Lanzhou beautiful, but it has a river and a bowl of noodles that both matter. The Yellow River runs brown and fast through the middle of town, crossed by the 1909 iron bridge and ridden by sheepskin rafts, and the beef noodle shops open at six and are the best in China.
The Gansu Provincial Museum holds the galloping bronze horse from Wuwei and a Silk Road collection that sets up everything you will see further west. The night market on Zhengning Road is where the city eats after dark.
Lanzhou is dry, high and dusty, with cold winters. Spring brings sandstorms; autumn is clear.
Getting there+
**Lanzhou West** is the high-speed station: Xi'an in about three hours, Xining in an hour, Zhangye three. Trains to Dunhuang take seven to eight hours by day or an overnight sleeper. The old **Lanzhou** station in the centre serves slower trains. **Zhongchuan (LHW)** airport is 70 kilometres north; the airport rail link to Lanzhou West takes about 45 minutes.
